I originally made this cilantro lime coleslaw to go inside fish tacos, with no intention of making a separate post about it. But in a delicious turn of events, I actually wanted to post this first. Since the tacos, I’ve been making this all summer for all kinds of things.

The slaw itself is store bought, since I don’t have a lot of uses for leftover cabbage. However, you can definitely make your own, too!

The dressing is where the magic happens. Instead of mayo, this recipe calls for whole milk Greek yogurt. Unlike mayo, the yogurt isn’t as heavy and offers a delicious tang that wouldn’t otherwise be there. A handful of fresh cilantro and a sprinkle of cumin is what made this cilantro lime coleslaw a great fit for the fish tacos.

From there, the dressing gets a healthy splash of lime from both zest and juice, brightening the flavor even more. Jalapeno offers a nice kick and green onions provide a little more crunch.

Storage

Since coleslaw tends to weep under refrigeration after a few days, make plans to finish it up within three days.

Bright, fresh and crisp – this coleslaw is the perfect summer side for fish tacos and so much more!


Ingredients

  • 1 cup whole milk Greek yogurt
  • 1/3 cup fresh cilantro, minced
  • 1/4 cup lime juice
  • 2 tsp lime zest
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 23 scallions, minced
  • 2 tsp garlic paste, or two minced cloves
  • 1 jalapeรฑo, deseeded and minced
  • 1 bag coleslaw mix (14 oz)

Instructions

  1. In a small bowl, mix together the yogurt, cilantro, lime juice, zest, cumin, salt, pepper, scallions, garlic paste and jalapeno. Stir until well combined. Add the coleslaw mix to a large serving bowl and pour over the dressing. Toss well and serve immediately. If storing, cover and refrigerate for up to 3 days.
