Bright, fresh and crisp – this coleslaw is the perfect summer side for fish tacos and so much more!

- 1 cup whole milk Greek yogurt
- 1/3 cup fresh cilantro, minced
- 1/4 cup lime juice
- 2 tsp lime zest
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 2–3 scallions, minced
- 2 tsp garlic paste, or two minced cloves
- 1 jalapeño, deseeded and minced
- 1 bag coleslaw mix (14 oz)
Instructions
- In a small bowl, mix together the yogurt, cilantro, lime juice, zest, cumin, salt, pepper, scallions, garlic paste and jalapeno. Stir until well combined. Add the coleslaw mix to a large serving bowl and pour over the dressing. Toss well and serve immediately. If storing, cover and refrigerate for up to 3 days.
