Peach Crostini with Goat Cheese
I served these cute little peach crostini at a recent “back to school” thing we had. Since I was so proud of these peach preserves, I had to give them one last moment before the imminent onslaught of pumpkin and apple recipes.
These crostini are the perfect snack. The bagel is perfectly crunchy with a satisfying bread-like flavor. The goat cheese is tangy and savory, and the peach preserves are sweet and jammy, of course. I added some everything bagel seasoning for added crunch and saltiness, and the fresh rosemary lends an herby, woody element that tops everything off.
There’s not much to these peach crostini, other than they WILL disappear wherever you take them. They were quite welcome at our back to school thing, even among the caramel apples and pumpkin bars. Give summer one more wave before you go!
