Description

A simple and fresh summer recipe that pulls together quickly with less than a handful of ingredients.


Ingredients

  • 15 oz can cream of coconut (preferably Coco Lopez)
  • 1/2 cup lime juice (fresh or bottled)
  • 3/4 cup cold water
  • 12 TB minced fresh mint (optional)

Instructions

  1. Whisk all the ingredients together until well combined and smooth. Add mixture to an ice cream maker and churn until soft serve consistency is reached, about 10 minutes. Freeze for at least 2 hours before scooping and serving.
