Spring Charcuterie Board
This has been my favorite board to make so far! I made seasonal ones for Thanksgiving and Christmas, so obviously I needed to create a spring charcuterie board. It was a lot of fun and turned out beautifully!
Like the previous boards, there’s no formal recipe card in this post. Instead, I walk through all the choices I made as far as ingredients go. To that end, feel free to sub things in and out according to your preference. The point of these boards is to have fun and let the creativity flow!
Cheese
I like to have a seasonal cheese, an “everyone likes this one” cheese, and then a more decorative, off the wall cheese. For this spring board, the seasonal pick was the baked lemon ricotta from Trader Joe’s, which is basically a slice of soft lemon cheesecake!
The crowd pleaser was what I always use, Murray’s mild cheddar cut into cubes or slices. Easy to poke with a pick or fork and a safe bet for most people.
The “off the wall” pick wasn’t really all that weird, but I knew I wanted a mini wheel of brie to cut out a spring flower. I used this daisy cookie cutter and filled the cutouts with marmalade and lemon curd.
Crackers & meat
Whenever I can get them, I buy a few containers of everything bagel crisps from Schwartz Brothers Bakery. My grocery store only carries them once in a while, and they’re absolutely delicious.
Because I’m on the everything bagel seasoning kick, I also used the crackers from Trader Joe’s. They were a little more sweet/mild than the crisps, so it was a nice difference while still keeping the same theme.
I use the same salami I always do, just a plain Genoa hard salami. Sometimes I get the black pepper kind, but that one is spicy and didn’t seem like a good fit for this spring charcuterie board.
Fruits, veggies & herbs
Carrots were non-negotiable, it IS Easter after all. For the most color, I used some multicolor organic baby carrots.
I kept the fruit seasonal with strawberries, raspberries and green grapes, along with some sliced clementines for a fresh citrus option. A few small sprigs of mint and rosemary were a nice garnish.
Everything else
The fun part! Pastel M & M’s, salted pecans, lemon Kit Kats and spring themed Chessmen cookies rounded out this spring charcuterie board. I also used a few flowers to decorate.
Finally, I like to have a few different dip options for both the veggies and everything else. I used a roasted red pepper hummus for the carrots, fresh honeycomb for the fruit and crackers, and then a tangerine marmalade for the flower cutout brie.
