Memorial day is LONG gone, but after I saw these Nilla wafer packets at the store, I had to do something with them. Well, besides eat them one after the other. And these walking banana puddings are the perfect way to use them. If you can believe it, these little goodies were a hit at our bonfire last week!

Get individual packets of cookies

I suggest vanilla wafers, but I guess you could really use anything. Oreos might be a fun deviation. But if you want the classic banana pudding taste, get the vanilla wafers. They are sold 12 packets to a box, which really comes in handy for portioning out the pudding.

Instant vanilla pudding

It’s actually pretty well known that Magnolia Bakery in NYC uses instant pudding for their famous banana pudding. So I guess in a way, these walking banana puddings are closer to that than my homemade one.

Anyways, you’ll need 2 bigger boxes (which means 6 cups cold milk) of instant vanilla pudding. They are 5.1 ounces each. On the box, you’ll see that it makes six 1/2 cup servings. Two boxes = 12 servings at 1/2 cup each. And wouldn’t you know, each bag of vanilla wafers (in the 12 packet case) needs 1/2 cup of pudding!!

Assembly

Take out half of the vanilla wafers from the packet and add 2-3 banana slices and 1/4 cup of pudding. Add the removed wafers, 2-3 more slices of banana, and the other 1/4 cup of pudding. Allow to set in the fridge for a couple hours so that the vanilla wafers can soften.

Topping

You can use canned whipped cream for convenience, although it doesn’t last that long before wilting. If you have the time, use homemade whipped cream and spoon some of that on top of each packet and garnish with cherries, additional banana slices, and extra vanilla wafers.

Description

Super easy and fun to make, these walking banana puddings make the best summer snacks!


Ingredients

  • 12 vanilla wafer cookie packets (sold in a case)
  • Two 5.1 oz boxes of instant vanilla pudding mix
  • 6 cups cold milk (any fat %)
  • 1–2 large bananas, sliced in 1/4 inch slices
  • canned whipped cream or homemade whipped cream
  • maraschino cherries (optional, for garnish)

Instructions

  1. Prepare the pudding with the milk according to the directions on the box, and allow to set.
  2. Remove half of the vanilla wafers from a packet, and add 2-3 banana slices on top of the wafers. Top with 1/4 cup pudding. Add the remaining half of vanilla wafers, 2-3 more banana slices, and another 1/4 cup of pudding. Repeat for the remaining vanilla wafer packets and allow the finished walking puddings to chill in the fridge for a couple hours so that the wafers can soften.
  3. Immediately before serving, top with whipped cream, additional vanilla wafers and banana slices, or a maraschino cherry.
