Description

Buttery and silky smooth, these amazing mashed potatoes are perfect for Thanksgiving and beyond!


Ingredients

  • 2 lbs (about 6 medium sized) Yukon gold potatoes, peeled and cut into 1 inch cubes
  • 5 TB unsalted butter
  • 1/2 tsp salt
  • 1/4 tsp fresh ground black pepper
  • 1/2 cup heavy cream
  • minced chives, optional

Instructions

  1. Add the cut potatoes to a large pot of salted, boiling water. Cook, stirring occasionally, until the potatoes are fork tender, 25-30 minutes.
  2. Drain the water from the potatoes and add the butter, salt, pepper and heavy cream. Use a hand mixer to whip the potatoes to the desired consistency.
  3. Serve hot with additional butter and sprinkled with fresh minced chives.
